Hey guys!! Sorry I’ve been MIA for a couple weeks; school got a little crazy. Anyway here’s one of my favorite breakfasts - Buckwheat Pancakes.
2 C almond milk (unsweetened or flavored, your preference)
1 1/2 C buckwheat flour
2 tsp vanilla
1 1/2 tsp baking powder
1/2 tsp cinnamon
juice of half a lemon
1 C dates blended into a paste
Directions: Mix all of the dry ingredients together. In a separate bowl, blend all of the wet ingredients together. Slowly add them to the dry ingredients. Mix well and cook them up in the frying pan. Add maple syrup, fruit, spread, or whatever toppings you prefer.
**TIP - cook all of the batter and then simply freeze whatever pancakes you don’t eat to be heated up for a grab-and-go any morning where you may not have time to make breakfast!!

1/4 C pecans
1/2 C almond flour
5 pitted medjool dates
1/2 tsp vanilla
2 tsp coconut oil
2 Tbsp. cacao powder
1Tbsp maca powder
3Tbsp. coconut oil, softened
3 Tbsp almond milk
1 tsp vanilla
1 Tbsp agave nectar
1 3/4 C almond flour
1/4 C coconut flour
1/4 C cacao nibs or dark choc chips
brownie - food process the pecans or chop into small bits. Process the dates to a paste. Add all ingredients into the food processor and blend until mixed well. Line a loaf pan with wax paper or aluminum foil and press the mix down into the pan.
cookie- Mix all of the wet ingredients together and then add the almond and coconut flours. Fold in the chocolate chips or nibs. Pour/press on top of the brownie layer. Let them refrigerate and firm up for about an hour. Cut into small squares and enjoy!
p.s. they might be very rich at first but they’re a great little nighttime snack :)
I really want you all to know that, as crazy as it sounds, just you following me is so important and so helpful in this journey of mine. I was 100% serious when I said that you guys will keep me accountable for all of actions upon this journey. THIS VERY SAME MORNING you were my motivators to get out of bed and workout. I hit the snooze button a couple of times before class and considered not doing the workout that I made the picture of. But then my conscience started to quickly eat away at me. I thought, what the heck is wrong with me? I can’t lie to them and say I did this workout if I didn’t! Bottom line - I have too much pride to be a fraud and I swear on my life that I will ALWAYS be 100% honest with all of you guys. Thanks again followers. Even though there aren’t many of you yet, you helped me more than you can ever imagine.
